Who doesn’t love fried foods? In Indonesia, fried foods are a snack and often become a delicious side dish. The ideal fried food is synonymous with its crispy and long-lasting crunchy texture. This crispy and crunchy texture is not just about preference, but it also adds to the enjoyment of eating it. Surely, customers will more likely return to vendors who have the best quality fried foods.
For Smart Bakers who run culinary and bakery businesses, you know that producing quality and consistent fried foods takes work. Have you ever made fried foods but ended up with them becoming soggy, not crispy, or too hard? Well, it could be that there was a mistake in the cooking method, making the texture of the fried food less than perfect.
This time, Chef Nicholas from Sinarmas Agribusiness and Food will share tips to improve the quality of fried foods for Smart Bakers’ culinary and bakery businesses.
1. Frying Oil Selection

To achieve fried foods with a crispy texture and long-lasting crunchiness, the key lies in choosing the right frying oil. It is crucial to use the best quality frying oil, specially formulated for frying and with a high smoke point to make the fried foods crispier.
2. Use the Deep-Frying Method

The method to cook crispy fried foods while ensuring perfect doneness is through deep-frying. During the cooking process, make sure the fried foods are completely submerged in hot oil. This way, every part of the fried foods receives even heat, and the final result? The fried foods become super crispy, perfectly cooked, and a favourite among Smart Bakers’ customers!
Don’t forget, after deep frying, clean the oil by filtering it so that the crumbs from the fried foods don’t contaminate the oil.
3. Pay Attention to the Oil Temperature

It turns out, frying at the ideal temperature is the key to achieving perfectly crispy fried foods. The ideal temperature for frying usually ranges between 170°C to 180°C for about 12-13 minutes. If the temperature is too low, the fried foods can become soggy due to absorbing too much oil. Conversely, if it’s too hot, the fried foods might quickly burn on the outside while still being undercooked on the inside. So, make sure to check the oil temperature before you start frying!
4. Adjust the Frying Time

Each type of fried food has its own ‘timing’ to achieve a crispy outside and perfectly cooked inside. So, Smart Bakers need to adjust the frying time according to the type of food. Don’t fry for too short a time, leading to undercooked fried foods, or too long, resulting in hard and burnt fried foods. The trick is to watch your fried foods and occasionally check their colour. If they’re golden brown and look crispy, it’s time to take them out and drain them.
5. Storage and Serving Methods

Besides the cooking method, another important aspect is the way fried foods are served. If the fried foods are still hot, don’t store them in a closed container right away, as it traps the hot steam and can make the fried foods moist and quickly soggy. Ensure the fried foods are stored in a showcase with a heater, or warm them up in a microwave before serving.

To ensure fried foods are crisper and their crunchiness lasts longer, Chef Nicholas recommends using solid oil for frying. PALMVITA® Deep Frying Fat is the right choice for Smart Bakers, as it is specially made for deep frying, and has a high smoke point, making it more stable at high temperatures, and thus maintaining its crispiness longer.
Moreover, PALMVITA® Deep Frying Fat is also more economical as it can be reused multiple times, with quality still maintained. So, besides being cost-effective, Smart Bakers can also get high-quality solid oil. Plus, PALMVITA® Deep Frying Fat is trans-fat-free, so no need to worry because it’s safe for long-term consumption.
